i can push them in by hand, then i tap the assy. on the bench to drive the hose in further. then when i go to screw in the 2nd part of the fitting, it pushes the hose back out. WTF?

Hmm, you have to be smarter than the hose, and spitting on them doesn't help LOL.
J/K, don't know, never done them myself.

When you install the collar be sure to screw it on to the hose, not just push it on. I like to use some oil on the inside of the hose to help things along and hold the hose while you push the second part in.

With the hose cut and taped push the ferrel (the nut part of the fitting) over the hose and slide it down the hose about a inch or so, this is usally easier to do while tiwsting the ferrel and pushing it on the hose at the same time. I then out the other male end of the fitting into the vise and then cram the the hose onto the male part of the fitting. If needed I also use a small screwdriver to tuck any loose cables frays back in. You need to twist the hose all the way up the male part of the fitting so that it's completely seated and then you have to twist the ferrel protion of the fitting back up the hose so that it screw on to the male portion and locks the hose in place.
Are you sure that you are using the right size fitting and hose?
BTW AN fittings suck I have over 20 of them on my car and I had to build most of them.
