What's the typical size AN fitting that people run for their radiator hose? Do most people only run AN/steel braided on the upper hose? and I could have sworn I saw somebody post that SOMEONE, somewhere, make's a pre-fab'd SBF thermostat housing with an AN fitting already "machined" (or welded) onto it...if so..WHO?

I'd use -16 hose and fittings. Yes most guys use steel braided hose. I have a plate, as I recall it has a -16 fitting welded on it. Let me know if you're interested.

I ran -16 braided hose on the Fairlane - worked good
