Seems like the coolant I keep smelling is running out from a weep hole in the firewall on the passenger side (never realized it was even there).
Question-can I simply disconnect the hose from the water pump and cap it or do I need to cap the line going back to the manifold also?

By far the easiest thing to do is to take the two heater hoses loose at the firewall and use a piece of piping or threaded nipple to connect the two hoses to each other with hose clamps.
If you wanted to get rid of the heater tube all together it can be done with an apadter to thread the ECT sensor directly into the intake manifold instead of into the heater pipe tube. When you do this you can cap the outlet on the waterpump and not worry about it anymore. If you need any help or pictures let me know, my coupe is set up this way since I don't have any of the HAVAC system at all.
Hope this helps.

Best thing to do in my opinion is to get rid of the heater pipe completely. You will have to get the right adapter to install the ECT sensor into the lower intake and I can't remember the size, here is a picture of my lower. You will also have to loose the EGR lines that come off the heater pipe as well.
